Zucchini rolls

It's time for a new zucchini level. These zucchini rolls are filled with plant-based feta and soy mince. Once baked, they are irresistible. Have fun trying them out!

Feta cream

Hack

  • 50 g Soy granules soaked
  • 1 white onion
  • 1 EL Sweet mustard
  • 1 EL Tomato paste
  • 1 EL Soy sauce
  • 1 TL Smoked paprika

Instructions
 

Prepare the mince

  1. Finely chop the onion. Pour off the soaked soy granules.
  2. Heat the oil in a pan. Add the onion to the pan and fry until translucent.
  3. Add the soy granules, sweet mustard, tomato puree, soy sauce and smoked paprika. Mix everything well and fry until golden brown.

Prepare the zucchinis and feta cream

  1. Cut the zucchini into thin strips using a peeler. Lay the strips next to each other with an overlap.
  2. Mix the vegan feta, vegan cream cheese and crushed garlic well in a bowl.

Assemble the zucchini rolls

  1. Spread the feta cream evenly over the zucchini strips.
  2. Place 2 tablespoons of mince in the middle of the zucchini strips. Carefully roll up the zucchini strips.

Baking

  1. Pour the tomato puree into a casserole dish and spread evenly.
  2. Place the rolled zucchini strips in the oven dish.
  3. Sprinkle the zucchini rolls with oil, salt, pepper and vegan Parmesan.
  4. Place in the oven for 40 minutes at 200 degrees fan.
