This zucchini pan pinsa is a creative and healthy alternative to conventional pizzas. What's more, it doesn't need to be cooked in the oven, but is simply prepared in the pan. The dough consists of light ingredients such as zucchini, almond flour and linseed. The almond flour makes the whole dish richer in protein. However, if you don't have any at home, you can easily replace it with wheat flour.

Ingredients for the dough

  • 3 EL Linseed
  • 6 EL warm water
  • 1 medium zucchini
  • 3 EL Almond flour
  • 4 EL Wheat flour Type 450 or type 630 spelt flour
  • 1 EL Strength
  • 1 EL Soy yogurt
  • 1 TL Vegetable broth
  • 1/2 TL Chilli
  • 1/2 TL Paprika
  • Salt & pepper
  • Oil for frying

Toppings

  • Vegan cheese spread
  • Red onions
  • Cherry tomatoes
  • Pizza seasoning
  • Fresh thyme & oregano

Instructions
 

Prepare the dough

  1. Soak the linseed in warm water until it has a gel-like consistency.
  2. Grate the zucchini and squeeze out the resulting juice.
  3. Mix the zucchini, soaked linseed and all the other dough ingredients in a bowl until a dough forms.

Fry the batter

  1. Fry some of the batter in the pan over a medium heat for 5 minutes.
  2. Turn and top with the desired toppings (vegan sprinkled cheese, red onions, cherry tomatoes, pizza seasoning).

Finishing and serving

  1. Close the lid of the pan and fry for a further 5 minutes on the other side until the batter is cooked through and crispy.
  2. Sprinkle with fresh thyme and oregano and enjoy the zucchini pans pinsa!
