Simple wholemeal spelt bread

This is my absolute favorite bread recipe. It consists of just a few simple ingredients & the carrots make the bread particularly moist! The longer the dough is kneaded, the fluffier it becomes. I make the bread about every 2 weeks and then freeze it in slices. Whenever I get a craving for bread I defrost a slice. Sometimes I also vary the ingredients. Instead of walnuts and rolled oats, you can also use other kernels or seeds, or leave out the walnuts or carrots if you prefer. Try it out!

  • 1 Bread tin (here Römertopf) or a casserole
  • 1 Food processor optional

Ingredients

These Ingredients make:

12 Slices of bread (1 loaf)

Dough ingredients

  • 500 g Wholemeal spelt flour
  • 400 ml Water
  • 3,5 g Dry yeast
  • 1 El Salt
  • 100 g Walnuts
  • 50 g Oat flakes
  • 2 Carrots grated

Dough

  1. Dissolve the yeast in water and leave to stand briefly.
  2. In a large bowl, mix the flour, salt, yeast and water mixture well to form a dough.
  3. Roughly chop the walnuts and work into the dough together with the rolled oats and grated carrots.
  4. Leave the dough to rise at room temperature for 1 hour or longer.

Shape and bake the dough

  1. Pour the dough into a prepared bread tin and spread evenly.
  2. Sprinkle with whole walnuts and rolled oats.
  3. Bake the bread for 50-60 minutes at 180 degrees convection oven until golden brown.

Serve

  1. Remove the bread from the oven and leave to cool.
  2. Cut into slices and enjoy with your favorite spreads.
