This vegan pesto pasta salad is a simple but delicious main course that can be prepared in just 15 minutes. It consists of wholemeal pasta, smoked tofu, dried tomatoes, cherry tomatoes and fresh rocket mixed with a vegan pesto verde and balsamic vinegar. Roasted pine nuts and Italian herbs provide additional flavor. This pasta salad is a perfect option for a quick dinner or light lunch and is also great as a gift for a birthday or barbecue!

Ingredients

These Ingredients make:

  • 250 g Wholemeal pasta
  • 200 g smoked tofu
  • 150 g Dried tomatoes
  • 3 EL Pesto Verde vegan
  • 3 EL Balsamic vinegar
  • 10 Cherry tomatoes
  • 1 Handful fresh rocket
  • 2 EL roasted pine nuts
  • Salt, pepper
  • Italian herbs

Instructions
 

Marinate tofu

  1. Squeeze the tofu, cut into cubes and marinate in 1 tbsp of pesto.

Cook pasta

  1. Cook the wholemeal pasta according to the instructions on the packaging.

Prepare the ingredients

  1. While the pasta is cooking, chop the sun-dried tomatoes and cherry tomatoes. Wash the fresh rocket and place all the ingredients in a large bowl.

Add the tofu and pesto

  1. Add the marinated tofu cubes and the rest of the pesto to the prepared ingredients in the bowl.

Add pasta

  1. Rinse the cooked pasta and add to the other ingredients. Mix carefully so that the pasta is well absorbed by the other flavors.

Seasoning

  1. Season with salt, pepper and a pinch of Italian herbs to taste.

Add pine nuts

  1. Sprinkle the toasted pine nuts over the pasta salad to add an extra crunchy texture.

Serve

  1. Portion the vegan pesto pasta salad onto plates and serve with fresh baguette.

Notes

For a variety of flavors, olives or vegan feta can be added as desired.
