This oriental Moroccan lentil soup is a warming and nutritious main course that is perfect for cold days. The recipe is simple and ready in just 25 minutes. It contains chickpeas, lentils, tomatoes, onions, garlic, carrots and celery, which are refined with olive oil and spices such as coriander, cumin, turmeric and paprika. The soup is served with fresh parsley, coriander and a squeeze of lemon juice. This delicious and healthy soup is sure to delight all lentil lovers.

Ingredients

  • 250 g Chickpeas
  • 300 g Lenses (yellow or red)
  • 400 g Tomatoes chopped
  • 600 ml Vegetable broth
  • 2 Onions small, chopped
  • 3 Garlic cloves chopped
  • 4 Carrots diced
  • 1 Disk Celeriac in cubes
  • 2 EL Olive oil

Spices & herbs

  • 1 TL ground coriander
  • 1/2 TL ground caraway seeds
  • 1 TL Turmeric
  • 1 TL Paprika
  • Fresh parsley and coriander
  • squeeze of lemon juice

Instructions
 

Fry the onions

  1. Dice the onions and sauté in olive oil in a large pan over a medium heat until translucent.

Add garlic

  1. Crush the garlic and add to the onions. Fry briefly until fragrant.

Prepare vegetables

  1. Chop the sweet potatoes, carrots and celery and stir into the pot.

Cooking lentils

  1. Add the washed lentils with the vegetable stock and cook for 15 minutes, stirring occasionally, until the lentils are soft and have absorbed the liquid.

Stir in the chickpeas and tomatoes

  1. Mix the chickpeas and chopped tomatoes into the lentils.

Seasoning

  1. Add the coriander, cumin, turmeric and paprika. Season to taste.

Serve

  1. Finish with fresh parsley, coriander and a squeeze of lemon juice.
  2. Pour the Moroccan lentil soup into bowls and serve with rice or flatbread as desired.
