Vegan hearty potato pan

This vegan hearty potato pan is a hearty main course and perfect for anyone who prefers a plant-based diet but doesn't want to miss out on the taste of German cuisine. The recipe came about by chance in my kitchen and since then it has been a regular item on our menu. The recipe is easy to make and ready in just 30 minutes. It contains potatoes, runner beans, mushrooms, onions and smoked tofu, which are deglazed with a delicious sauce made from vegetable stock, white wine and spices. Have fun cooking!

Ingredients

These Ingredients make:

Ingredients

  • 200 g Potatoes cut into quarters and pre-cooked
  • 100 g Runner beans
  • 250 g Mushrooms halved
  • 2 Onions finely diced
  • 200 g Smoked tofu in cubes
  • 2 EL Oil for frying

Sauce to deglaze

  • 200 ml Vegetable broth
  • 1 Shot White wine approx. 50ml

Spices

  • 1 TL Strength or flour
  • 1 TL Nutmeg
  • 1 TL Rosemary
  • 1 TL Thyme
  • 1 TL Salt & pepper

Instructions
 

Prepare the potatoes

  1. Cut the potatoes into quarters and boil them in advance until they are just cooked.

Fry

  1. Heat the oil in a large pan
  2. Fry the diced onions and smoked tofu in the pan until golden brown.

Add vegetables

  1. Halve the mushrooms and add to the pan with the runner beans. Fry everything, stirring occasionally, until the vegetables are lightly browned.

Prepare the sauce

  1. In a bowl, mix the starch or flour with the vegetable stock, white wine, nutmeg, rosemary, thyme, salt and pepper.

Deglaze and simmer

  1. Pour the prepared sauce over the vegetables and stir well. Bring to the boil briefly until the sauce thickens slightly.

Add the potatoes and serve

  1. Add the pre-cooked potatoes to the pan and carefully fold them in until they are coated in the sauce.
  2. Season to taste and serve immediately.

Notes

You can also use wine vinegar instead of white wine. A great alternative is to stir 1 tablespoon of white almond butter into the sauce.
