Vegan burritos

Today I have the world's best burrito recipe for you! I came up with this recipe 2 years ago while cooking with a friend, and because I've made and tweaked it so many times since then, it's finally time to share it with you. My highlight in the burritos is the homemade soy-walnut mince, which gets the perfect consistency from the walnuts. See for yourself and have fun cooking!

Ingredients

These Ingredients make:

4 Burritos
  • 250 g Red cabbage
  • 2 Red onions
  • 1 Lime
  • 4 large wraps
  • 4 small wraps
  • 200 g vegan cheese spread

Guacamole

  • 2 Avocado
  • 1 Lime Juice
  • 1 Pinch Salt,Pepper
  • 2 Garlic cloves pressed

Walnut hack

Toppings

  • Vegan mayonnaise
  • Fresh parsley

Instructions
 

Prepare the red cabbage and onions

  1. Grate the red cabbage and onions into thin strips.
  2. Then mix with the juice of one lime.

Prepare guacamole

  1. Cut the avocado in half, remove the stone and scoop out the flesh.
  2. Place in a bowl and mash with a fork.
  3. Add the lime juice, salt, pepper and crushed garlic and mix well.

Prepare the walnut-soy mince

  1. Boil the soy granules in the vegetable stock and simmer for 5 minutes. Then drain.
  2. Roughly chop the walnuts.
  3. Heat the oil in a pan and add the chopped walnuts and soy granules.
  4. Add the soy sauce, smoked paprika, pepper and date syrup.
  5. Mix everything well and fry until a crumbly consistency is achieved.

Topping burritos

  1. Place a large wrap on a work surface and sprinkle with vegan sprinkle cheese.
  2. Place a small wrap on top. Spread the small wrap generously with guacamole and top with the walnut mince.
  3. Then add the red cabbage and onion mixture on top.
  4. Garnish with vegan mayonnaise and fresh parsley.

Rolling burritos

  1. Roll up the burrito and fry in a pan with a little oil on both sides until golden brown.

Notes

You can also fill the burritos with other vegetables. Carrots, peppers, corn or kidney beans also fit in perfectly. Just look at what you have at home and create your favorite burrito. I am looking forward to your creations.
