  • Red cabbage
  • Cucumber
  • Avocado
  • Lime
  • Spring onions
  • Sesame
  • Paprika

Instructions
 

Prepare the smoked tofu

  1. Fry the smoked tofu in oil, deglaze with soy sauce and season with chili, thyme and coriander.
  2. Put the tofu to one side.

Prepare the sauce

  1. Mix the ayvar, agave syrup, soy sauce, water, starch and white sesame seeds in a bowl. Put the mixture to one side.

Sauté the mushrooms and garlic, add the pasta and sauce

  1. Sauté the mushrooms and garlic in oil
  2. Add the udon noodles and deglaze with the prepared sauce.
  3. Mix everything well and simmer briefly until the sauce thickens.

Fill the bowl

  1. Fill the udon noodle bowl with the prepared ingredients, including the fried smoked tofu, pak choi, red cabbage, cucumber, avocado, lime wedges, spring onions, sesame seeds and peppers.
