  • 6 Tomatoes large
  • 2 Onions
  • 1 Garlic bulb
  • 3 cm Ginger
  • 1 TL Salt
  • 1 TL Pepper
  • 500 ml Vegetable broth
  • 400 g strained tomatoes
  • 400 g Soy skyr
  • 1 EL Maple syrup

  • Baguette
  • Margarine

Instructions
 

Preparing roasted vegetables

  1. Halve or roughly chop the tomatoes, onions, garlic and ginger.
  2. Place the vegetables on a baking tray, drizzle with oil and sprinkle with salt and pepper.
  3. Roast the prepared vegetables for 40 minutes in a fan oven at 180 degrees.

Steaming and pureeing

  1. Sauté the roasted vegetables in a pan.
  2. Add the vegetable stock and puree everything to a velvety consistency.
  3. Stir in the tomato puree, soy skyr and maple syrup until a creamy consistency is achieved.

Refine with toppings and serve:

  1. Garnish the tomato soup with fresh herbs and chili flakes to taste
  2. Serve the tomato soup with grilled baguette and margarine.
