Sweet potato gnocchi with homemade pesto

Have you ever made gnocchi yourself? I tried it with sweet potatoes and they turned out delicious! The sweet taste of sweet potatoes combined with a homemade pesto made from fresh basil, garlic and pine nuts is perfect if you want to cook something special.

Ingredients

These Ingredients make:

2 Portions
  • 500 g Sweet potatoes
  • 20 ml Olive oil
  • 130 g Flour
  • 1 TL Salt

For the pesto

  • 100 g fresh basil
  • 1 Garlic clove
  • 50 g Pine nuts
  • 80 ml Olive oil
  • 2 TL Yeast flakes
  • 1 TL Salt

Toppings

  • Dried tomatoes
  • Pine nuts
  • Basil

Instructions
 

Prepare the sweet potatoes

  1. Peel the sweet potatoes and cut into cubes.
  2. Mix with oil and spread on a baking tray.
  3. Bake in a preheated oven at 180 degrees for about 30 minutes until soft.

Prepare pesto

  1. In the meantime, blend all the ingredients for the pesto in a blender until creamy.

Making gnocchi dough and cooking gnocchi

  1. Mash the baked sweet potatoes and mix with flour and salt to form a dough.
  2. Pour the batter into a piping bag. Alternatively, it can be rolled out by hand and cut into small pieces.
  3. Place the gnocchi in boiling water and remove as soon as they rise to the surface.

Fry and serve

  1. Fry the cooked gnocchi in a pan until golden brown.
  2. Add the prepared pesto and mix well.
  3. Garnish with sun-dried tomatoes, pine nuts and fresh basil.
  4. Serve immediately and enjoy!
