Sweet chili udon noodles

This recipe came about by chance. I had some homemade sweet chili sauce left over, which I used as a dip for dumplings the night before. So I thought about what else I had in the house and came up with these delicious sweet chili udon noodles, and the pea or soy medallions make the recipe higher in protein. Of course, you can also leave them out if you don't have them at home. As soon as I tasted the dish, I knew I had to share it with you!

These Ingredients make:

2 Portions
  • 250 g Udon noodles
  • 50 g Pea or soy medallions soaked in vegetable stock
  • 2 Carrots
  • 100 g Sugar snap peas
  • 200 g Mushrooms
  • 1/2 Covenant Spring onions

Sweet chili sauce

Instructions
 

Cooking udon noodles

  1. Cook the udon noodles according to the packet instructions.
  2. When draining, save 50 ml of pasta water for further use.

Prepare the sauce and medallions

  1. Mix all the ingredients for the sauce (sesame oil, soy sauce, agave syrup, rice vinegar, noodle water, sesame seeds, chili flakes) in a bowl.
  2. Soak the pea or soy medallions in hot vegetable stock for 5 minutes and then drain.
  3. Fry the soaked medallions in a pan until they are golden brown.

Chop and sauté the vegetables

  1. Cut the carrots into thin slices, halve the mangetout, slice the mushrooms and slice the spring onions into rings.
  2. Add the remaining vegetables to the sautéed medallions in the pan and fry until golden brown.

Add the udon noodles and sauce

  1. Add the cooked udon noodles and prepared sauce to the sautéed vegetables and medallions.
  2. Stir everything together well until the sauce is evenly distributed.
  3. Serve the sweet chili udon noodles immediately and enjoy the perfect mix of sweet, savory and spicy flavors. Enjoy your meal!
