Ingredients

These Ingredients make:

  • 500 g Pasta
  • 4 Carrots
  • 3 Parsnips
  • 2 Onions
  • 1 Garlic bulb
  • 120 g Chickpeas Cooked, from a jar or can
  • 50 ml Agave syrup
  • Oil at will
  • 1 Pinch Salt, pepper
  • 500 ml vegan cream (oats, soy...)
  • 3 EL Tomato paste
  • 1 TL Cumin
  • 1 TL Paprika powder
  • 1 TL Salt

Prepare vegetables

  1. Preheat the oven to 180 degrees/convection
  2. Halve the carrots and parsnips, quarter the onions, cut off the head of the garlic bulb and place in an ovenproof dish together with the chickpeas.
  3. Drizzle with oil and agave syrup, season with salt and pepper and place in the oven for 50 minutes.

Pasta cooking

  1. While the vegetables are cooking in the oven, cook the pasta according to the instructions on the packet.

Prepare the sauce

  1. Put the baked vegetables in a blender.
  2. Add the oat cream cuisine, tomato puree, cumin, paprika powder and salt.
  3. Blend everything into a creamy sauce.

Serve

  1. Mix the sauce with the cooked pasta.
  2. Garnish with fresh coriander and a pinch of chilli flakes and enjoy!

Notes

Tip:
Sprinkle the roasted vegetables with a squeeze of lemon juice before blending. This gives the dish an additional, invigorating taste. Have fun enjoying your sweet carrot hummus pasta!
