Sushi stacks

I recently came across a video about sushi stacks and thought it was such a good idea that I immediately came up with a vegan version. If you like sushi but don't feel like rolling it, I can highly recommend this dish! It's super simple and yet really something special. You can score points at any dinner.

Equipment

Ingredients

These Ingredients make:

2 Sushi stacks
  • 125 g Sushi rice (sticky rice)
  • 1 Avocado cut into slices
  • 1 Mango diced
  • 1/2 Cucumber diced
  • 200 g Tofu
  • 30 ml Soy sauce
  • 1 EL Sesame
  • 30 ml Date syrup

Toppings

  • Sriracha sauce
  • Sesame
  • Fried onions

Instructions
 

Cooking sushi rice

  1. Wash the sushi rice thoroughly with clean water
  2. Then cook according to the instructions on the packaging until soft and sticky.
  3. Put the cooked rice to one side and leave to cool slightly.

Preparing tofu

  1. Cut the tofu lengthwise into two slices.
  2. Fry the tofu slices in a pan with a little oil, soy sauce, sesame seeds and date syrup until golden brown.
  3. Leave the fried tofu to cool slightly and then cut into small cubes.

Layers of sushi stacks

  1. Start with a layer of avocado slices at the bottom of the glass or cup.
  2. Place a layer of diced cucumber on top.
  3. This is followed by a layer of diced mango.
  4. Then add a layer of the fried and diced tofu cubes.
  5. Finish with a layer of cooked sushi rice.

Shaping the sushi stacks

  1. Press lightly on the ingredients in the jar with a spoon or tamper to compress them.
  2. Turn the jar over and gently tap the bottom to remove the sushi stack.
  3. If the sushi stack does not fall out immediately, use a thin, moistened knife to loosen the rice along the inside wall of the jar.

Serve

  1. Garnish the sushi stacks with Sriracha sauce, sesame seeds and fried onions as desired.
