Sunflower seed Bolognese

Do you know anyone who doesn't like spaghetti bolognese? There's nothing like a cozy evening with a delicious bolo. This vegan version with sunflower seeds not only offers a delicious texture, but is also a great plant-based alternative. You absolutely have to try it out!

These Ingredients make:

  • 500 g Spaghetti

Bolognese

  • 1 Onion
  • 3 Garlic cloves
  • 1 Carrot
  • 1/4 Celeriac
  • 10 Mushrooms
  • 150 g Sunflower seeds
  • 500 g chopped tomatoes
  • 1 EL Tomato paste
  • 1 each EL Basil, oregano, paprika spice
  • Salt, pepper

Toppings

  • Fresh basil
  • Parmesan cheese vegan

Instructions
 

Cooking spaghetti

  1. Bring the water to the boil in a pan.
  2. Add salt and cook the spaghetti al dente according to the instructions on the packet.
  3. Drain and set aside.

Prepare and sauté the vegetables

  1. Finely dice the onion, garlic, celery and carrot.
  2. Halve the cherry tomatoes.
  3. Sauté the onions, garlic, celery and carrot in a pan with a little oil until soft.
  4. Add the sunflower seeds and cherry tomatoes and fry until golden brown.

Add sauce

  1. Stir in the chopped tomatoes, tomato purée, basil, oregano and paprika seasoning.
  2. Season to taste with salt and pepper.
  3. Simmer the mixture until the sauce has thickened.

Serve and enjoy

  1. Pour the sunflower seed Bolognese over the cooked spaghetti.
  2. Garnish with fresh basil and vegan parmesan. Enjoy your meal!

Notes

Tip: Refine the Bolognese with a dash of red wine
  • Add a generous dash of red wine to the bolognese after the onions, garlic, celery and carrot have been sautéed until soft.
  • Allow the red wine to reduce briefly to concentrate the flavors and give the dish a rich depth.
  • The red wine helps to add a complex flavor note and can make the Bolognese even more delicious.
