These Ingredients make:

  • 180 g Quinoa
  • 25 g Soy granules
  • 200 ml Vegetable broth
  • 60 g Oat flakes
  • 15 g Linseed
  • 2 Garlic cloves
  • 1 Onion
  • 1 small carrot
  • 1 EL Parsley fresh
  • 1 TL Salt deleted
  • 1 Pinch Chili
  • 1 Pinch Pepper

Prepare the quinoa and soy granules

  1. Bring 180 g quinoa to the boil in a pan with twice the amount of water.
  2. Reduce the heat, cover and simmer until the water has been absorbed and the quinoa is soft.
  3. Soak 25 g soy granules in vegetable stock.
  4. Drain after 10 minutes and remove excess liquid.

Prepare vegetables

  1. Finely grate 2 cloves of garlic, 1 onion and 1 small carrot.
  2. Finely chop 1 tablespoon of fresh parsley.

Prepare the quinoa mixture

  1. In a bowl, mix together the quinoa, soy granules, grated vegetables, 60 g rolled oats, 15 g linseed, chopped parsley, 1 level teaspoon of salt, a pinch of chili and a pinch of pepper.
  2. Leave the mixture to soak briefly.

Filling Preparation, shaping and filling

  1. Mix 75 g vegan cream cheese with 3 tbsp fresh chives
  2. Shape the quinoa mixture into balls weighing about 60 g.
  3. Make a well in each ball and fill with the cream cheese and chive mixture.

Frying and serving

  1. Fry the stuffed quinoa balls in a pan over a low heat for about 8 minutes per side until golden brown.
  2. The quinoa balls are ready when they are crispy on the outside and cooked through on the inside.
  3. Serve with a side dish or sauce to taste and enjoy!
