Have you ever dipped strawberries or bananas in batter and then fried them? This is such a brilliant Sunday breakfast, you have to try it. These mini pancakes are not only delicious, but also a sweet start to the day. Watch as the fruit is wrapped in the batter and turns into little works of art in the pan.

These Ingredients make:

2 Portions
  • 2 Bananas in slices
  • 8 Strawberries in writing
  • 180 g Spelt flour
  • 2 EL vegan protein powder (Cinnamon)
  • 1 TL Baking powder
  • 1 EL Agave syrup
  • 240 ml Plant drink
  • 2 EL Apple cider vinegar
  • Pinch of salt

Prepare the dough

  1. Mix the spelt flour, vegan protein powder, baking powder and a pinch of salt in a bowl.
  2. Add the plant-based drink, apple cider vinegar and agave syrup.
  3. Mix everything into a smooth batter.

Cut the fruit and dip in the batter

  1. Slice the bananas and strawberries.
  2. Dip the banana and strawberry slices into the batter until they are completely covered with batter.

Fry the pancakes and enjoy

  1. Lightly grease and heat a frying pan
  2. Place the batter-coated fruit in the pan and fry on both sides until golden brown.
  3. Remove the mini pancakes from the pan and top with maple syrup, berries or nuts as desired and enjoy!
