Smashed broccoli

Do you know the trend with the smashed potato? I tried it with broccoli because I'm an absolute fan of broccoli. This recipe for smoked broccoli with smoked tofu and cheese is a delicious way to enjoy the green vegetable in a new and tasty way.

Ingredients

These Ingredients make:

15 Broccoli florets
  • 600 g Broccoli
  • 60 g Smoked tofu
  • 4 EL Olive oil
  • 2 TL Italian herbs
  • 20 g Sprinkled cheese vegan
  • Salt, pepper

Instructions
 

Prepare the broccoli and smoked tofu

  1. Separate the broccoli florets and cook in boiling water for 5 minutes until al dente.
  2. Finely grate the smoked tofu and mix with the oil and Italian herbs.

Flatten and top the broccoli

  1. Spread the broccoli florets out on a baking tray.
  2. Carefully flatten with a glass to create an even surface.
  3. Spread the prepared smoked tofu mixture generously over the broccoli.
  4. Sprinkle the cheese over the topped broccoli.
  5. Season with salt and pepper.

Bake and serve

  1. Bake in a preheated oven at 200 degrees / fan oven for 20 minutes until crispy.
  2. Remove from the oven and serve immediately.
