Roast lentils in a puff pastry coating (Lentil Wellington)

If you don't have much time at Christmas but want to cook something really special, this dish is just the thing for you. The filling only takes 20 minutes and I think this plant-based roast is a wonderful modern alternative to grandma's traditional Christmas roast. You will love it.

Ingredients

These Ingredients make:

8 Servings / 1 roast lentil
  • 1 Puff pastry (270 g, approx. 40 x 24)

Filling

  • 2 Onions medium sized
  • 2 Garlic cloves
  • Olive oil for browning
  • 1 Carrot
  • 1/2 Bar Leek
  • 250 g Mushrooms
  • 200 g red lentils
  • 500 ml Water
  • 100 g Oat flakes
  • 140 g Pecans
  • 2 TL Tomato paste
  • 1 EL Vegetable stock powder
  • 1 TL Smoked paprika
  • 1 TSP TL Marjoram
  • 1 TL Cumin

Toppings

  • Salt, rosemary, thyme

Instructions
 

Prepare the filling

  1. Fry the onions and garlic in oil in a saucepan until golden brown.
  2. Add the carrot, leek, mushrooms, lentils and water. Put the lid on and heat over a medium heat. When the mixture starts to boil, reduce the heat and simmer for 15 minutes until the lentils are soft.
  3. Add the rolled oats, pecan nuts, tomato puree, vegetable stock powder, smoked paprika, marjoram and cumin. Mix everything well and leave to soak for a further 5 minutes.

Coat with puff pastry

  1. Roll out the puff pastry on a clean surface and spread the prepared filling on top.
  2. Carefully fold the puff pastry on all sides to enclose the filling.
  3. Carefully turn everything over once and score lightly with a knife.

Bake and sprinkle with toppings

  1. Preheat the oven to 200 degrees/convection
  2. Bake for 25 minutes until the puff pastry turns brown
  3. Remove the roast lentils from the oven, sprinkle with salt, rosemary and thyme and serve with Christmas garnishes.
