Today we have a sandwich with delicious chili hummus, grilled vegetables, salad and the tasty vegan mini meatballs from Greenforce.
Frikas are the perfect option if you're short on time but still want to include something protein-rich in your lunch. Like many other Greenforce products, they are made from pea protein.

These Ingredients make:

Chili hummus

  • 100 g Hummus nature
  • 2 TL Chili oil
  • 1 TL Chili flakes
  • 1 TL Paprika powder

Grilled vegetables

  • 1 Eggplant
  • 1 Zucchini
  • 1 Paprika
  • 1 Onion
  • Oil to taste
  • Salt and pepper

Instructions
 

Prepare the chili hummus:

  1. Put the hummus in a bowl.
  2. Add the chili oil, chili flakes and paprika powder and mix well.

Prepare and grill grilled vegetables, prepare mini meatballs

  1. Cut the eggplant, zucchini, bell pepper and onion into even pieces.
  2. Drizzle the vegetables with oil and season with salt and pepper.
  3. Grill the vegetables on the barbecue or in a grill pan until they are soft and lightly browned. Alternatively, you can also grill it in the oven at 250 degrees / grill function.
  4. Grill or fry the mini meatballs. Can also be served cold.

Assemble the pita sandwich:

  1. Cut open the pita bread and spread with chili hummus.
  2. Place the lamb's lettuce and sliced tomato in the pita bread.
  3. Add the grilled mini meatballs and the grilled vegetables.
  4. Serve the pita sandwich immediately and enjoy.
