I've always wanted to try my hand at this Persian dish. Here is my version of jewel rice, in which the individual components sparkle like jewels.this Persian jewel rice is not only beautiful to look at, but also a real treat. The flavors come together here in a mixture of sweet agave syrup, fresh orange and a colorful mix of pistachios, cranberries, goji berries and almonds. Preparation is straightforward, but the result is a delicious journey through a variety of flavors.

Ingredients

These Ingredients make:

2 Portions
  • 1 Orange
  • 1 large onion
  • 250 g Rice
  • 60 g Pistachios chopped
  • 70 g Cranberries
  • 70 g Goji berries
  • 60 g Almonds chopped
  • 100 ml Agave syrup
  • Oil for frying
  • 0,1 g Saffron
  • 70 ml Water
  • 1 TL Salt

Preparations

  1. Grate the orange peel.
  2. Chop the onion, pistachios, cranberries and almonds.
  3. Cook the rice according to the packet instructions.

Preparing jeweled rice

  1. Fry the orange peel in oil for 3 minutes
  2. Add the pistachios, cranberries, almonds, goji berries and onions. Fry for a further 5 minutes.
  3. Stir in the agave syrup.
  4. Squeeze the orange and allow the juice to caramelize for 3 minutes.
  5. Spread half of the cooked rice in the pan.

Add saffron water

  1. Mortar the saffron threads or use ground saffron. Dissolve in water.
  2. Pour the saffron water over the rice. Season with salt and stir well.

Sideboards

  1. First layer other half of white cooked rice.
  2. Second layer of jeweled rice.
  3. Top with dried cornflower blossoms.
