Mini Pancakes (Cereal)

Mini pancakes are not only delicious, but also perfect for a hearty breakfast or a sweet snack between meals. We made the pancakes with plant-based yogurt and fruit for breakfast. You can also use the batter for normal pancakes. You will love it!

Ingredients

These Ingredients make:

2 Servings (1 serving corresponds to approx. 15 mini pancakes)

For the pancakes

  • 200 g Wheat flour Type 450
  • 450 ml Almond drink
  • 1 EL vegan protein powder optional
  • 1 EL Agave syrup or maple syrup
  • 2 EL Apple cider vinegar

For the toppings

  • 5 Mini miwis
  • 200 ml Plant drink
  • 1 TL Date syrup
  • 1 Handful Pomegranate seeds

Instructions
 

Prepare the dough

  1. Place the flour, almond drink, protein powder (if using), baking powder, agave syrup and apple cider vinegar in a bowl.
  2. Mix everything together until a uniform dough is formed.

Roast pancakes

  1. Preheat the pan with a little fat over a medium heat.
  2. Pour thumb-sized portions of batter into the pan and fry on both sides until golden brown.

Preparing and serving toppings

  1. Wash and halve the mini kiwis.
  2. Arrange the pancakes on a plate.
  3. Top with the halved mini kiwis.
  4. Pour the plant-based drink, pomegranate seeds and date syrup over the pancakes.
