Mediterranean potato salad

I usually made salads like this with pasta. As I'm a big fan of potatoes, I thought I'd give crispy baked potatoes a try. The combination is perfect and is great for summer evenings or as a side dish for a barbecue!

Ingredients

These Ingredients make:

4 Portions
  • 15 small potatoes Triplets
  • Olive oil to taste
  • Pinch of salt, pepper
  • 2 Red onions
  • 100 g Dried tomatoes
  • 10 Cherry tomatoes
  • 1 Handful Basil fresh
  • 50 g Pine nuts Roasted
  • 50 g Vegan parmesan

Dressing

  • 60 ml Olive oil
  • 60 ml Balsamic vinegar
  • 1 EL Red pesto vegan
  • Salt, pepper

Instructions
 

Prepare and roast the potatoes

  1. Wash and quarter the potatoes. Mix with olive oil, salt and pepper.
  2. Spread on a baking tray and roast in the oven for 30 minutes at 200 degrees (fan oven).

Prepare the dressing

  1. Mix the olive oil, balsamic vinegar and red pesto in a bowl.
  2. Season to taste with salt and pepper.

Prepare other ingredients

  1. Peel the onions and cut into fine rings. Cut the dried tomatoes into small pieces.
  2. Wash and halve the cherry tomatoes. Pluck the basil leaves and roughly chop.
  3. Toast the pine nuts in a pan without oil until they are golden brown. Roughly chop the vegan parmesan

Assemble and serve the salad

  1. Place the roasted potatoes in a large bowl.
  2. Add the onions, sun-dried tomatoes, cherry tomatoes, basil and pine nuts.
  3. Pour the prepared dressing over the salad and mix well. Sprinkle the vegan Parmesan over the salad.
  4. Serve the Mediterranean potato salad on plates. Garnish with more fresh basil leaves, if desired.
