Marble banana bread with blueberries

I had bananas left over and really wanted to bake a banana bread. I couldn't decide whether to make a chocolate banana bread or a light banana bread with blueberries. So I came up with the idea of simply combining the two and baking a marble banana bread. The blueberries add just the right amount of flavor, and I am very happy with this discovery. The recipe is something special and yet very easy to prepare. You will love it!

Equipment

  • 1 Ovenproof loaf pan
  • 1 Mixer or whisk

Ingredients

These Ingredients make:

8 Portions
  • 2 Bananas
  • 60 g Coconut oil
  • 100 g Maple syrup or agave syrup
  • 150 g Flour
  • 50 g Oat flakes
  • 3 EL Applesauce
  • 200 ml Oat milk
  • 1 TL Cinnamon
  • 1 Pinch Salt
  • 2 TL Baking powder

Additionally for the chocolate part

  • 2 EL Baking cocoa
  • 1 EL Oat milk
  • 200 g Blueberries
  • 100 g Chocolate drops optional

Toppings

  • 1 Handful Blueberries
  • 1 Banana halved

Instructions
 

Preparations

  1. Preheat the oven to 180 degrees fan.
  2. Line a baking tin with baking paper.

Preparing the dough base

  1. Peel the bananas and mash them in a large bowl.
  2. Melt the coconut oil and mix with the mashed banana, maple syrup, flour, rolled oats, apple sauce, oat milk, cinnamon, a pinch of salt and baking powder.

Prepare the chocolate part and fold in

  1. Add the baking cocoa and additional oat milk to the remaining batter and stir in.
  2. Fold in the blueberries and optional chocolate drops.
  3. Pour the chocolate part onto the light-colored batter in the mold and carefully fold in with a fork in a circular motion to create the marbling.

Toppings, baking and serving

  1. Decorate with blueberries as desired and garnish with halved bananas.
  2. Bake for about 40 minutes or until a toothpick comes out clean.
  3. Leave to cool and cut into slices, serve and enjoy the juicy banana bread!
