Kale pasta

This kale pasta actually came about quite by chance. I wasn't sure if it would all fit together like that. But hey, after the first attempt we were so enthusiastic that we cooked it again the next day. The whole thing is not only vegan and healthy, but has turned out to be an ingenious mix. A winter dish that brings warmth and flavor to your plate. Try it out and be surprised by this unexpected culinary adventure!

These Ingredients make:

3 Portions
  • 250 g Pasta
  • 3 Hands full Kale
  • 1 red onion
  • 3 Garlic cloves
  • Oil at will
  • 2 EL Tomato paste
  • Juice of one lemon
  • 1 EL Agave syrup
  • 400 ml vegan cream (oats, soy...)
  • 60 ml Pasta water
  • Salt, pepper

Preparing kale and cooking pasta

  1. Start by removing the stems from the fresh kale leaves and then cut them into fine strips.
  2. Bring a pan of water to the boil and cook the pasta according to the instructions on the packet.
  3. When draining the pasta, save 60 ml of the pasta water for later use.

Sauté the onion, garlic & kale

  1. Finely chop the red onion and gently fry in a large pan with a dash of oil until it turns golden.
  2. Finely chop or press the garlic. Add it to the pan together with the prepared kale.
  3. Sauté everything for 5 minutes until the kale is tender.
  4. Season the mixture with a pinch of salt and pepper to intensify the flavors.

Stir in the remaining ingredients

  1. Stir the tomato puree into the mixture first, then the freshly squeezed lemon juice and agave syrup and stir everything together.
  2. Then pour in the vegan cream and mix everything into a creamy sauce.
  3. Carefully add the cooked pasta and the saved pasta water to the kale sauce.

Season to taste and serve

  1. Taste the dish and adjust the seasoning with salt and pepper to your taste.
  2. Finish the dish with generous portions of vegan parmesan and a pinch of chili flakes.
