These crispy Hasselbach sweet potatoes are not only super tasty, but also healthy. The combination of spicy herbs, sweet ayvar sauce and a creamy soy skyr dip gives this dish a variety of flavors. Topped with pomegranate seeds for a fruity note and an extra portion of vitamins. This dish is easy to prepare and perfect for social evenings or as a healthy snack option.

  • 2 Sweet potatoes
  • Fresh rosemary
  • Oil, salt, pepper

  • 1 Handful Pomegranate seeds
  • Fresh rosemary, thyme

Instructions
 

Processing sweet potatoes

  1. Carve the sweet potatoes into thin slices until just before the bottom.
  2. Drizzle with oil and season with salt, pepper, rosemary and thyme.
  3. Bake in the oven for 30 minutes at 200 degrees top/bottom heat.

Preparation of the dip:

  1. Mix the soy skyr with the sesame butter.
  2. Season to taste with salt and pepper.

Prepare and serve the sauce

  1. Mix the ayvar and maple syrup together.
  2. Spread the soy skyr sesame dip generously on a plate.
  3. Arrange the crispy baked Hasselback sweet potato on top.
  4. Pour over the ayvar sauce. Garnish with pomegranate seeds, fresh rosemary and thyme.
