Kumquat salad with protein topping

Do you know kumquats? We harvested them from our kumquat tree and used them to create a summer salad. If you don't have kumquats available, you can simply replace them in the recipe with oranges without the peel.

Ingredients

These Ingredients make:

1 Portion
  • 2 Hands full Lamb's lettuce
  • 60 g Walnuts
  • 60 g Cranberries
  • 5 Kumquats or oranges

Protein topping

Dressing

  • 2 EL Oil
  • 4 EL Orange juice
  • 4 EL Vinegar
  • 1 El Agave syrup
  • Salt, pepper

Instructions
 

Prepare the kumquats and dressing

  1. Cut the kumquats into thin strips.
  2. Mix the oil, orange juice, vinegar, agave syrup, salt and pepper in a small bowl.

Prepare the protein topping

  1. Boil the pea or soy granules in water until soft and then drain.
  2. Heat the oil in a pan and fry the granules in it.
  3. Add the chopped garlic and fry briefly.
  4. Stir in the tahini and orange juice until a creamy consistency is achieved.
  5. Season to taste with salt and pepper.

Preparing and serving the salad

  1. Arrange the lamb's lettuce evenly on a plate.
  2. Top with kumquats, protein topping, cranberries and walnuts.
  3. Pour the dressing evenly over the salad.
