Grilled peaches with cashew curd

It's going to be barbecue weather again this weekend. I have a summery barbecue dessert recipe for you. Have you ever put peaches or fruit in general on the grill? The peaches are caramelized by the heat and become juicy and sweet. As a side dish, I conjured up a creamy plant-based quark made from cashews and soy skyr. With crumbled oat cookies as a topping, this combination is simply a dream!

Equipment

  • 1 Grill
  • 1 Hand blender or mixer

Ingredients

These Ingredients make:

5 Peaches
  • 5 Peaches
  • 200 g Cashew nuts
  • 400 g Soy skyr
  • 2 EL Syrup e.g. maple syrup, date syrup or agave syrup
  • 1 Splash Lemon juice

Toppings

  • Crumbled oat cookies
  • Dried flowers
  • Date syrup
  • Fresh mint

Instructions
 

Cashew soy curd

  1. Soak the cashew nuts in water for 10 minutes or longer.
  2. Drain the cashew nuts and blend with the soy skyr, syrup and a dash of lemon juice in a blender or food processor until creamy.

Grilling peaches

  1. Halve the peaches and remove the stone.
  2. Place the peach halves on the grill for about 10 minutes until they are lightly grill-marked.

Top the peaches and serve

  1. Generously cover the grilled peach halves with the cashew-soy quark mixture.
  2. Garnish the topped peaches with crumbled oat cookies, dried flowers, a drizzle of date syrup and fresh mint.
  3. Enjoy your meal!
