Here is a simple and delicious pasta salad recipe for the beautiful summer days with a tasty green dressing, protein-rich pasta & the watermelon gives the whole thing the right kick! The Green Goddess dressing is not only suitable for pasta salad but also for other salads or as a dip. I prepared the salad with Eva Bean noodles to make the dish more protein-rich. You can of course use the pasta of your choice.

These Ingredients make:

Salad

  • 200 g Watermelon
  • 100 g Cucumber
  • 200 g Fava bean noodles or other pasta to taste

Dressing

  • 80 g Spinach
  • 1/2 Covenant Basil
  • 1 Garlic clove
  • 1/2 Onion
  • 50 g Peas
  • 40 ml Oil
  • 25 ml Water
  • 1 EL Vinegar
  • 1 TL Salt
  • 40 g Walnuts
  • Juice of one lemon
  • 1 EL Yeast flakes
  • 1 Pinch Pepper

Toppings

  • Walnuts, basil, chili flakes

Instructions
 

Cook pasta, cut watermelon and cucumber

  1. Cook the fava bean noodles according to the packet instructions, drain and leave to cool.
  2. Cut the watermelon and cucumber into even cubes.

Preparation of dressing

  1. Puree the spinach, basil, garlic, onion, peas, oil, water, vinegar, salt, walnuts, lemon juice, yeast flakes and pepper in a blender until you have a creamy dressing.

Composition of the salad

  1. In a large bowl, mix together the cooked fava bean noodles, diced watermelon and cucumber.
  2. Pour the prepared dressing over the salad and mix everything together carefully.
  3. Garnish the pasta salad with walnuts, fresh basil and chili flakes to taste.
