Granola Bars (No Bake)

These delicious granola bars are the best snack, dessert or even a nutritious option for on the go. They do not need to be baked and will keep for 5 days in the fridge or 1 month in the freezer. The bars are best enjoyed cold. I brought the bars to a brunch the other day and everyone really wanted the recipe.

Ingredients

  • 250 g tender oat flakes
  • 100 g Pumpkin seeds
  • 30 g Grated coconut
  • 100 g Dried fruit
  • 1 Pinch Salt
  • 1 TL Cinnamon
  • 80 ml Coconut oil
  • 80 ml Maple syrup
  • 80 g Nut butter
  • 2 EL Plant drink optional

Toppings

  • 150 g Chocolate
  • Grated coconut
  • Dried berries

Instructions
 

Mix dry ingredients

  1. Mix the rolled oats, pumpkin seeds, grated coconut, dried fruit, salt and cinnamon in a large bowl.

Add liquid ingredients

  1. Melt the coconut oil in a pan, then add the maple syrup and nut butter. Stir well.
  2. Pour the liquid mixture over the dry ingredients.
  3. Stir carefully until all the ingredients are well combined. If the mixture is too dry, plant-based drink can be added as an option.

Press the dough firmly and melt the chocolate

  1. Press the mixture evenly into a tin lined with baking paper.
  2. Melt the chocolate and pour evenly over the dough.

Sprinkle with toppings, chill and enjoy

  1. Sprinkle the grated coconut and dried berries over the melted chocolate.
  2. Place the tin in the fridge for at least 2 hours until the mixture has set.
  3. Cut the cooled mixture into bars and serve as desired. Enjoy your meal!
