Cookies with chocolate, mint & coconut

I've always liked the combination of chocolate and mint. And because cookies always work, we recently thought about how to get the flavor into the cookies. Here is the final result. I think it's perfect because it tastes just a hint of mint, not too much and not too little. Have fun baking!

These Ingredients make:

12 Cookies
  • 20 g Mint fresh
  • 225 g Flour
  • 25 g Coconut flakes
  • 1 TL Vanilla extract
  • 125 g vegan butter
  • 90 ml Maple syrup
  • 1 Pinch Salt
  • 2 TL Baking powder
  • 1 EL Applesauce or apple puree
  • 150 g Dark chocolate vegan

Toppings

  • Fresh mint
  • 50 g Dark chocolate vegan
  • Coconut flakes

Instructions
 

Preparing the ingredients

  1. Wash, dry and finely chop the fresh mint.
  2. Roughly chop the chocolate

Prepare the dough

  1. In a large bowl, mix together the flour, coconut flakes, vanilla extract, vegan butter, maple syrup, salt, baking powder and apple sauce until a dough forms.
  2. Add the chopped dark chocolate to the dough and carefully fold in and knead until it is evenly distributed.

Preheat the oven

  1. Preheat the oven to 180 degrees (fan oven).

Shaping and baking the cookies

  1. Shape the dough into 50 g balls with your hands and place on a baking tray lined with baking paper.
  2. If the dough sticks, the portions can also be placed on the tray with the help of 2 teaspoons.
  3. Bake the cookies in the preheated oven for 15 minutes until they are golden brown.
  4. Remove and carefully flatten with a glass to give them the desired shape.
  5. Leave the cookies to cool completely on the baking tray.

Preparing the toppings and decorating the cookies

  1. Melt the chocolate in a bain-marie or in the microwave on a low setting until it is smooth and liquid.
  2. Drizzle or spread the melted chocolate over the cooled cookies.
  3. Garnish with a pinch of coconut flakes and fresh mint.

Leave to cool and serve

  1. Leave the cookies to cool completely so that the chocolate sets.
  2. Arrange the cookies on a serving platter and enjoy!
