No more plant-based drinks at home? Then try it with coconut milk! This vegan coconut porridge is a perfect and healthy breakfast for a good start to the day. It consists of rolled oats, water and coconut milk mixed with nuts, cinnamon and agave syrup. The porridge is then garnished with toppings such as soy yogurt, coconut flakes, linseed, berries and peanut butter. The creamy texture and delicious taste of the coconut porridge make for a satisfying meal that will keep you full until lunch.

Ingredients

  • 1 TL Coconut oil
  • 1 Handful Nuts
  • 65 g Oat flakes
  • 180 ml Coconut milk 200ml
  • 180 ml Water
  • 1 TL some cinnamon
  • 1 TL Agave syrup

Toppings (variable)

  • 2 EL Soy yogurt
  • 1 EL Coconut flakes
  • 1 TL Linseed
  • 1 Handful Berries
  • 1 TL Peanut butter

Instructions
 

Roasting nuts

  1. Toast the nuts in coconut oil in a pan over a low heat until fragrant and lightly browned.

Allow the oat flakes to swell

  1. Place the rolled oats and water in the same pan and allow to swell over a medium heat.

Add coconut milk and spices

  1. Gradually add the coconut milk, agave syrup and cinnamon while stirring. The mixture should have a creamy consistency.

Serve

  1. Transfer the coconut porridge to a bowl.

Add toppings

  1. Add soy yogurt, coconut flakes, linseed, berries and peanut butter as toppings as desired.

Enjoy warm

  1. Serve the porridge warm and enjoy the delicious flavors.

Quick version (microwave)

  1. Place all the ingredients in a bowl in the microwave (2 min/700 watts).
  2. Stir in a dash of coconut milk until the desired consistency is reached.
