Chocolate crossie tartlets

Chocolate crossies are a super easy recipe to snack on, and best of all, they don't need to be baked! Now I felt like pimping up the crossies a little this time and came up with the idea of a vegan yogurt topping. The recipe is perfect for summer afternoons or for a sweet breakfast!

Equipment

  • 1 12 muffin tin or individual muffin tins
  • 1 Bowl

Ingredients

These Ingredients make:

Chocolate crossies

  • 300 g Vegan dark chocolate
  • 1 EL Coconut oil
  • 200 g Cornflakes

Protein cream

  • 400 g Soy skyr
  • 30 g vegan protein powder Vanilla flavor

Toppings

  • Raspberries, blueberries, chia seeds

Instructions
 

Chocolate crossies

  1. Melt the chocolate and coconut oil in a bain-marie or in the microwave (400W).
  2. Fold the cornflakes into the melted chocolate until everything is well mixed.
  3. Using two spoons, scoop out small mounds and place in a 12-cup muffin tin or 12 muffin cups.
  4. Then place in the fridge or cellar for 60 minutes until the chocolate crossies are firm.

Protein cream

  1. In the meantime, mix the soy skyr and protein powder together.

Assemble

  1. Top each of the finished crossies with 1 tbsp of the protein cream.
  2. Garnish with berries and chia seeds and enjoy.
