Caramelized onion pasta

I recently saw a video in which onions were baked in the oven with vegan cream cheese and then used as a pasta sauce. This gave me the idea of spicing it up with smoked tofu, wild garlic and sun-dried tomatoes. Also add a little syrup so that the onions can caramelize nicely in the oven. Then just mix everything together with your favorite pasta and you have a brilliant dinner. If you're a fan of caramelized onions, this is just the thing for you!

  • 350 g Pasta
  • 200 g Dried tomatoes pickled from the jar
  • 1 Covenant Wild garlic fresh
  • 60 ml Pasta water

Instructions
 

Preparing the oven and baking

  1. Peel and thinly slice the shallots. Grate the smoked tofu or cut into small cubes.
  2. Place the shallot slices, vegan cream cheese, maple syrup and smoked tofu in a baking dish. Season with salt, pepper and oil to taste. Mix well.
  3. Bake in a preheated oven at 200 degrees Celsius (fan oven) for about 40 minutes until the shallots are soft and slightly caramelized.

Preparing the pasta, chopping the wild garlic and tomatoes

  1. In the meantime, cook the pasta according to the instructions on the packet. Save 60 ml of pasta water and set aside.
  2. Cut the sun-dried tomatoes into small pieces and finely chop the fresh wild garlic.

Mix everything together

  1. Drain the cooked pasta and return it to the pan.
  2. Add the caramelized onions from the oven, the chopped sun-dried tomatoes and the wild garlic.
  3. Add the reserved pasta water to thin the sauce and mix well.
  4. Season with salt and pepper to taste.
  5. Serve hot and enjoy!
