Broccoli pasta

Even as a child, broccoli with pasta was my favorite food. I have cooked it many times and the combination with coconut milk is definitely my favorite. With a little spiciness, this dish also has an Asian flavor. Let us surprise you!

These Ingredients make:

  • 250 g Pasta
  • 1 Broccoli

Sauce

  • Oil for frying
  • 3 Garlic cloves
  • 1 TL Chili flakes
  • 1 TL Oregano
  • 1 EL Paprika powder
  • 1 Onion
  • 12 Cherry tomatoes
  • 2 EL Tomato paste
  • 1 TL Salt
  • 200 ml Coconut milk
  • 50 ml Pasta water

Instructions
 

Prepare the broccoli and pasta

  1. Bring the water to the boil. Place the broccoli in the boiling water for 3-4 minutes. Drain the broccoli and put to one side.
  2. Cook the pasta according to the packet instructions until al dente. Drain the pasta, reserving 50 ml of the pasta water.

Prepare the sauce

  1. Heat the oil in a pan. Finely chop the garlic cloves and add to the pan together with the oregano and chili flakes. Fry everything briefly until the garlic is fragrant.
  2. Finely chop the onion and add to the pan. Halve the cherry tomatoes and add together with the tomato purée and salt.
  3. Fry everything until the tomatoes are soft and the onions are translucent.

Finish the sauce and bring everything together

  1. Add the coconut milk and the collected pasta water to the pan. Stir well and bring to the boil.
  2. Add the cooked pasta and blanched broccoli to the sauce in the pan.
  3. Mix everything well until the pasta and broccoli are evenly coated with the sauce. Enjoy!
