Broccoli pasta (homemade - with scissors)

I loved broccoli even as a child. I recently saw a video where the pasta was cut with scissors. I found that really exciting and was keen to try it out. The addition of broccoli provides a special taste experience. You absolutely have to try it out! Add a protein-rich chickpea and tomato sauce and the next dinner is ready.

These Ingredients make:

Pasta

  • 250 g Broccoli
  • 300 g Flour
  • 2 TL Salt

Sauce

  • 250 g Chickpeas
  • 2 Garlic cloves
  • 200 g strained tomatoes
  • 2 EL Tomato paste
  • Italian herbs
  • Salt, pepper

Preparing the broccoli pasta dough

  1. Cook the broccoli until soft.
  2. Mash the soft broccoli and knead with flour and salt to form a firm ball of dough.

Cutting pasta with scissors

  1. Use scissors to cut off the dough over boiling water.
  2. Cook the pasta for 5 minutes and then drain.

Prepare the sauce

  1. Fry the garlic in a pan.
  2. Add the chickpeas and sauté.
  3. Stir in the tomato purée and tomato paste until everything is well combined.
  4. Season the sauce with Italian herbs, salt and pepper.

Fold in the pasta and serve

  1. Divide the broccoli pasta between plates.
  2. Garnish with fresh basil and vegan parmesan.

Notes

Tip: Dip the scissors in water from time to time so that they don't stick to the dough
