Blueberry porridge

Quick, tasty and healthy in the morning - a blueberry porridge is just the thing. Simply simmer everything together, perhaps add a hint of vanilla and a dash of maple syrup, and your fruity start to the day is ready. Whether at home or as a quick snack between meals, the taste of warmed blueberries is always a highlight.

Ingredients

These Ingredients make:

1 Portion
  • 1 Cup Oat flakes delicate
  • 2 Cups Almond milk or another plant-based milk of your choice
  • 1/2 Cup fresh blueberries
  • 1 EL Maple syrup (optional)
  • 1 TL Vanilla extract (optional)
  • 1 Pinch Salt
  • Toppings of your choice (e.g. nuts, grated coconut, soy yogurt, banana, additional blueberries)

Instructions
 

Cooking the oat flakes

  1. Heat the almond milk in a pan until it is warm but not boiling.
  2. Add the rolled oats and simmer over a medium heat.
  3. Stir occasionally until the oat flakes have reached the desired consistency.

Add blueberries

  1. Add fresh blueberries directly to the boiling porridge.
  2. Add maple syrup to taste and stir gently.

Season and serve

  1. Add the vanilla extract and a pinch of salt. Mix everything well.
  2. Pour the blueberry porridge into bowls.
  3. Garnish with toppings of your choice, such as chopped nuts, shredded coconut, banana or additional blueberries.

Notes

Note: 1 cup of rolled oats equals 90 g and 1 cup of milk equals 240 ml (i.e. a total of 480 ml for the recipe).
