Baked Oats Raspberry Chocolate

Here is my favorite and simple recipe for baked outs. You can eat it for breakfast or surprise friends with it in the afternoon, take it on a picnic & everything your oatmeal heart desires. Baked oats are not only delicious, but also a nutritious option for an energizing start to the day. The combination of oat flakes, bananas, chocolate drops and protein makes them the perfect snack. I baked the baked oats in mini casseroles, but you can prepare them in any other ovenproof dish.

Equipment

  • 1 Ovenproof baking dish or 2 small casseroles

Ingredients

These Ingredients make:

2 Portions
  • 150 g Oat flakes
  • 220 ml Plant drink (oat, almond, soy)
  • 2 ripe bananas
  • 150 g Chocolate drops vegan
  • 2 EL Sweetener (e.g. maple syrup or agave syrup)
  • 3 EL Protein powder vegan, cinnamon or vanilla flavor
  • 3 EL Nut butter (e.g. almond or peanut butter)
  • 2 TL Baking powder
  • 1 Handful Raspberries

Toppings

  • Chocolate drops
  • Raspberries

Instructions
 

Prepare the dough

  1. Mash the bananas to a pulp.
  2. Add all the other ingredients except the raspberries and mix well to obtain a homogeneous batter.
  3. Carefully fold in the raspberries so that they are evenly distributed in the batter.

Transfer the dough and bake

  1. Transfer the batter to one or 2 ovenproof dishes.
  2. Bake in a preheated oven at 180 degrees top and bottom heat for about 20 minutes until the muffins are golden in color.

Add toppings

  1. After baking, decorate with fresh raspberries and chocolate drops.
  2. Enjoy warm

Notes

The vegan protein powder is only a supplement. If you don't have any at home, you can simply leave it out and use 20 ml of plant drink. If you are looking for recommendations for plant-based protein powder, please contact me.
