This recipe for baked cauliflower is super easy to prepare. The cauliflower is roasted in the oven until golden brown and then finished with a delicious sauce. The toppings of fresh parsley, pomegranate seeds and chopped almonds add the perfect finishing touches to make this dish a real firework of flavor. Quick, easy and incredibly tasty!

These Ingredients make:

2 Portions
  • 1 Cauliflower medium sized
  • 3 EL Oil
  • 1 Pinch Salt

Sauce

  • 3 EL Sesame paste
  • 2 EL Agave syrup
  • 2 EL Tomato paste
  • 1 Pinch Juice of half a lemon
  • 1 Pinch Salt
  • Water to dilute

Toppings

  • Fresh parsley
  • Pomegranate seeds
  • Chopped almonds

Instructions
 

Prepare the cauliflower

  1. Cook the cauliflower in salted water for 6-8 minutes.
  2. Drain and place on a baking tray.

Baking

  1. Drizzle the cauliflower with oil and sprinkle with salt.
  2. Place in the oven at 200°C for 30 minutes until golden brown.

Prepare the sauce

  1. Mix the sesame purée, agave syrup, tomato purée, lemon juice and a pinch of salt.
  2. If necessary, dilute with water to achieve the desired consistency.

Refine and enjoy cauliflower

  1. Remove the baked cauliflower from the oven.
  2. Baste generously with the prepared sauce.
  3. Sprinkle fresh parsley, pomegranate seeds and chopped almonds generously over the cauliflower as toppings.
