I love recipes that are simple, but still special. This asparagus scarpaccia definitely belongs in this category again. Vegetables are mixed with a simple batter, baked and in the end you have prepared a wonderful dinner for you and your friends. Have fun baking!

  • 300 g Green asparagus
  • 300 g Potatoes
  • 200 g Onions
  • 100 g Parmesan cheese vegan

  • Salt
  • Fresh parsley
  • Paprika flakes

Instructions
 

Preparing the vegetables

  1. Cut the green asparagus into approx. 5 cm pieces.
  2. Slice the onions and potatoes.

Make the dough

  1. Mix the flour, water, starch, salt and oil in a bowl.
  2. Stir the prepared vegetables into the batter until everything is well distributed.

Baking preparation

  1. Preheat the oven to 225 degrees / fan.
  2. Coat the baking paper with oil to prevent it from sticking.

Baking

  1. Spread the dough evenly on the prepared baking paper.
  2. Sprinkle with vegan parmesan.
  3. Bake in a preheated oven at 225 degrees Celsius for about 40 minutes until the surface is golden brown.

Serve

  1. Remove the baked asparagus and potato scarpaccia from the oven and sprinkle with salt, fresh parsley and paprika flakes to taste.
  2. Cut into pieces and serve.
