Ingredients

These Ingredients make:

Rice

  • 300 g Rice
  • Sesame oil for frying

Vegetables

  • 2 Garlic cloves
  • 1 Onion
  • 1 Covenant Spring onions
  • 1 Paprika
  • 3 Carrots
  • 1 Handful Sprouts
  • 1 Handful Peanuts
  • 1 EL Tomato paste
  • 50 ml Soy sauce
  • 3 EL Agave syrup
  • 1 TL Chili flakes

Tofu egg

  • 2 TL Sesame oil
  • 200 g Tofu
  • 2 EL Soy yogurt
  • 1 TL Turmeric 1
  • TL Kala Namak (black salt)

Toppings

  • Chili flakes, black sesame seeds, peanuts, lime wedges

Instructions
 

Cook rice

  1. Cook the rice according to the packet instructions and set aside.

Preparing the tofu egg

  1. Heat the sesame oil in a frying pan or wok.
  2. Cut the tofu into cubes and add to the hot oil.
  3. Add the soy yogurt, turmeric and kala namak (black salt).
  4. Fry everything well until the tofu turns golden. Remove from the pan and set aside.

Preparing fried rice

  1. In the same pan, sauté the onion and garlic in the sesame oil.
  2. Gradually add all the other vegetable ingredients and sauté for approx. 5 minutes.
  3. Stir in the tomato puree, soy sauce, agave syrup and chili flakes.
  4. Finally, stir in the cooked rice and the prepared tofu egg and fry everything for a further 3 minutes.
  5. Top with chili flakes, black sesame seeds, peanuts and lime wedges.
