Apple and cinnamon pancakes

Sunday is pancake day for us. When it comes to cozy breakfast moments, vegan apple-cinnamon pancakes are simply unbeatable! This recipe is my absolute favorite because I'm a big apple fan. They are quick and easy to prepare and the combination of juicy apple slices and the warm aroma of cinnamon gives these pancakes the perfect taste.

  • 1 Pan
  • 1 Stirrer (optional) or whisk

Ingredients

These Ingredients make:

9 Pancakes
  • 200 g Spelt flour Type 630
  • 1 TL Cinnamon
  • 1 Pinch Salt
  • 240 ml Plant drink (e.g. oats, almonds, soy...)
  • Agave syrup to taste (here 1 tablespoon)
  • 1 EL Apple cider vinegar
  • 2 Apples peeled and cut into thin slices
  • Oil or margarine for frying

Toppings

  • Soy yogurt, date syrup, puffed quinoa, cinnamon

Instructions
 

Make the dough

  1. In a large bowl, mix together the flour, cinnamon and salt.
  2. In a separate bowl, mix the plant-based milk, agave syrup and apple cider vinegar well.
  3. Pour the liquid ingredients into the dry ingredients and mix until you have a smooth batter.

Fry the pancakes, top with apple slices

  1. Heat a little oil in a frying pan.
  2. Pour a ladleful of batter into the pan and spread thinly.
  3. Place a few apple slices on the still liquid dough.
  4. Bake over a medium heat until golden brown on both sides and the pancakes are cooked through and slightly crispy.
  5. Serve warm and enjoy with toppings!
